Los chiles rellenos son un platillo de México y de Guatemala que consiste básicamente en piezas enteras de chile rellenas con alimentos, usualmente cárnicos, a las que se les envuelve en una capa de huevo batido y se les fríe. Se les considera platillo principal y suele acompañárselos de una guarnición de legumbres.

La variedad de chile es relevante, debido a que se requiere que las piezas sean de una talla consecuente para poder contener alimento, y a que por tradición no se utilizan variedades de chile demasiado picantes.

Los chiles más utilizados para rellenar son los chiles poblanos frescos. Aunque hay quienes utilizan chile huachinango o pimientos morrones.

Existen muchas variedades de relleno para los chiles, siendo las más populares el puré de papa con atún, los quesos para fundir y los guisos de carne molida.

Los chiles en nogada son una variedad de chiles rellenos. En los cuales existen desde los años 90s por personas que solo lo consideraban como un platillo comun y que dia con dia a ido mejorando.
